BBQ Bacon Grilled Cheese

Servings 1 sammich

Equipment

  • 1 skillet Cast Iron is preferable, but any skillet will work.

Ingredients 

  • 2 slices bread of choice
  • 1 tbsp softened, spreadable butter
  • 2 slices sharp cheddar cheese
  • 3 slices thick cut bacon
  • 1 dollop bbq sauce.

Instructions

  • Place skillet on stove, turning the heat to medium.
  • Cook bacon to preferred crispness.
  • Remove bacon from pan and leave only enough bacon grease in the pan to lightly coat the pan.
  • Spread butter on one side of each slide of bread
  • Place one slice on the skillet, butter side down.
  • Place cheese on top of the bread. Then the bacon on top of the cheese
  • Spread a healthy amount of bbq sauce on the clean side of the remaining slice of bread. Then place the bread, bbq sauce side down, onto the sammich, so the butter of slice 2 is facing upwards.
  • Let bread cook for a few minutes, until golden brown (3-5 minutes, depending on your stove).
  • Flip the sandwich and cook for another 2-3 minutes. This side will cook faster, so be mindful.
  • As an option, you can spread a small amount of butter on each side of the bread once grilled, to add more butter flavor.

This is going to be kind of an informal “recipe”. I feel like it needs to be because the idea of a sammich is that you’re hungry and you need portable food. Don’t overthink it. I wrote it up, but intentionally left out the nutrition facts.

Aldi’s has a keto friendly bread that is about 9-10g of carbs per slice, all fiber. As a diabetic, this is awesome for the occasional grilled cheese craving. Its still very bread like, and quite delicious. They also make a couple of different flavors of bread – so you’ve got options.

I cannot stress enough how important it is to NOT overthink this. The only real concern you should have is to not burn the sammich. If you’re concerned about that, I would use a medium to medium low heat, let the pan heat up for 5-10 minutes, and then flip the sammich about every minute or so. Generally you dont want to do this, but part of knowing your equipment is to experiment and possibly burn or undercook your food. I defer on the side of caution and flip more. The butter and bacon grease will only help you in that it should help the sammich not stick.

Cook the bacon before hand and use the bacon grease to cook the sammich in, which will add more flavor. I’m not one to tell people how to live their lives, but cook the bacon crispy or don’t cook it at all. Don’t ruin the sammich by introducing limp bacon.
